Temple sorcerers typically have their successors picked out in advance by the Temple. That can be refused, since it is a radical change to one's life.
At the moment a sorcerer dies, the demon is... well, has the mentality of jumping from a ship that is on fire, into a stormy sea. If htey stay where they are, they will die, and they know they need something physical to hold onto and quick, or they will die. A younger demon will just jump to the most complex and strongest mind; an experienced one can stay calm enough to pick one person out of those assembled. A dying sorcerer might try to ask, but... death doesn't wait. And the youngest demons usually possess animals first, so they don't even have language or human understanding yet.
After that... the bond lasts until sorcerer or demon is killed. If the sorcerer is unwilling, the demon can be exorcised back to the Bastard's Hell.
